Cameron,
The 8515 is one of the megas that has an external memory buss which is  
why it is good for this app, the "programmer" uses the cartridge as  
memory which greatly simplifies the design.
The mega162 and most of the 64-100 pin parts do as well.

Its interesting that the arduinoboy seems more midi i/o than "boy"  
part (3 pins directly to the cable). Mebby I will have to pull the  
quix cartraige out of my gameboy.
