Some of the smaller devices don't have UARTs.
Some may substitute a comparator for an ADC etc.
As was suggested the ATmega168 (or ATmega328)
is a very good choice for a lot of small projects.
One UART, SPI, I2C (you loose two ADC channels).
The TQFP package has eight channels of ADC lines.
The QFN package is about half the size of the TQFP.
If you need two UARTs (as my newest board needed)
take a look at the ATmega644 in the TQFP-44 package.
This adds another UART, some more digital IO and
you don't loose ADC channels for the I2C. You can also
get it in DIP-40-600.
